The perfect sweet treat for peanut butter lovers.
Salted Peanut Butter Oatmeal Blondies
*Makes 12 blondies
1 cup coconut sugar
1 cup runny peanut butter
1 tsp vanilla
1 cup oat flour
1/2 cup rolled oats
1 tsp of baking powder
1 tsp of sea salt
2 tbsp coconut flour
1 cup Almond milk (or any non-dairy milk)
Preheat the oven to 350 degrees. Grease a brownie tin and set aside.
Using a hand mixer, blend coconut sugar, peanut butter and vanilla until moist batter forms.
In a separate bowl, whisk together the remaining ingredients
Add the dry mixture on top of the wet, then mix again using the mixer on the lowest setting.
Slowly add up to 1 cup of almond (or any non-dairy) milk until the mixture moistens up and large clumps form. I did this in 1/4 cup increments, adding and blending as I worked my way up in between each addition. Add more milk if needed!
Finally stir through chocolate chips and pour mixture into the brownie tin.
Bake at 350 for 30 minutes.
