2 beaten eggs
1/2 cup black beans (canned - low sodium)
1/2 avocado, sliced
1/4 cup salsa
salt and pepper to taste

Heat olive oil in pan and then add beaten eggs for scrambling. Microwave black beans until warm (about 1 minute). Divide beans into two bowls and top each with half of scrambled eggs, 1/2 avocado slices, and unlimited salsa.
