The perfect lunch or before dinner fresh and healthy summer salad.
Makes one serving
360 calories, 24.5 g protein, 20 g carb, 22 g fat
1/2 avocado, diced
1 cucumber, peeled, chopped
2 tsp lime juice
1/2 cup cilantro
1/4 green onion/chives
4 oz raw ahi tuna or 1/2 can tuna (in water)
1 tsp olive oil
Use half of large cucumber if needed
Place four oz of cubed tuna in bowl with lime juice with salt, pepper, and olive oil
Directions for preparation:
1. Diced avocado, place in large bowl, toss with 1/2 lime juice. Dice cucumber (bite size pieces) and add to bowl.
2. Chop cilantro and green onion, add to bowl. Add rest of the lime juice - stir gently to combine all ingredients.
3. Dice raw tuna into bite size chunks or open canned tuna, drain water, use fork to break up large pieces if necessary - add to bowl with rest of ingredients.
4. Combine all ingredients by stirring gently (leave larger chunks of canned tuna). Season with salt and pepper as desired.
